El Sótano’s menu has been carefully designed by the renowned executive chef of Grupo Folies Alex Arquero. It is based on an updated, modern Mediterranean cuisine, with technique and touches of world cuisines; we can find touches of Asian or South American cuisine, but always with Mediterranean cuisine as a reference.
